When To Harvest Sweet Potatoes ?


Growing sweet potatoes is not a difficult task, but it does take patience and careful planning, if you want to get it right. Ideally you should visit the grocery store around February or March and pick up some small sized sweet potatoes. Store them in mason jars on returning home, and make sure that there is water in the jar that is covering one third of the tuber.


After you have waited for 2 to 3 months, you will see the tubers sprouting, with slips growing from them. Wait for another 1 to 2 weeks and then remove the slips and put them in a separate jar of water. These slips will then re-sprout and you will see 'water roots' coming out of them. The best time for planting these is around May, or whenever the weather in your area gets nice and warm.

First you need to create a big furrow by using good soil. The furrow must be quite deep so that the tubers ill have space to grow. Also, you must make sure that the soil is well cultivated, which you can take care of by using good quality composted horse manure and peat moss. Use a plastic sheet to cover the mound, with 1-inch holes punched about 18 inches apart from one another.

After a few weeks you will see the slips expanding and covering the area around them. They will need plenty of space, so you must keep that in mind while planting. The sweet potatoes should begin maturing between 95 to 110 days, and that is the time when you should be thinking of harvesting them.
