Sweet potatoes are loaded with carbohydrates, but that does not mean that you should not eat them. In fact, American physicians during the Colonial times used to highly recommend this vegetable for preventing nutritional diseases in children. Sweet potatoes are very nutritious, taste extremely good and are absolutely easy to cook!


Yet, they do not receive the kind of attention given to other such healthy foods. Only a handful of families in the United States enjoy the goodness and delicious taste of sweet potatoes all through the year, while most of them use these delicious and healthy vegetables only once a year -- for Thanksgiving dinner.

The person to be thanked for discovering the sweet potato, which is a Native American food, is none other than Columbus. The Native Americans used to call this root vegetable ‘batata’, was then taken by the Spanish to their own country around 1500. Usually orange or yellow in color, the most popular type of sweet potato in America is the yam. Sweet potatoes are usually eaten roasted, just like regular potatoes, and are high in carbohydrate content, but not as high as 'regular' potatoes, plus they are richer in fiber content.

Let us look at the carbohydrate content in various measures of sweet potato. One cup or 11.6oz of boiled and mashed sweet potato has approximately 58.1 carbohydrates; one large sized sweet potato (6 oz or 170.1g) comes with roughly 37 carbohydrates, 100g of boiled sweet potato has 17.5 carbohydrates, and 100g of sweet potato baked in its skin has approximately 22 carbohydrates.
