Why-Onions-Make-People-Cry      When onions are cut, its cells are broken. This releases enzymes called allinases to break down into amino acid sulfoxides and generate sulfenic acids. These acids are unstable, and spontaneously get converted into a volatile gas -- syn-propanethial-S-oxide. This gas moves through the air and reaches the eye. In the eye, it binds with sensory neurons to create a stinging sensation. The tear glands then produce tears to dilute this chemical and flush it out as an irritant. More..
