Kaffir lime leaves are vastly used in Asian cuisines. They are dark green in color and have a strong smell and taste. They are excellent for flavoring any kind of dish. The fruit of the tree is not that popular. It has a thick crumpled skin along with a nipple-like protuberance at the top and bottom of the fruit. The leaf of the tree is more valuable than its fruit.

For many of the popular Thai dishes like Tom Yum, the Kaffir lime leaf is an irreplaceable ingredient. They are used in noodles, soups, starters and main course dishes. In soups and starters, you can use the leaves by chopping them up or as whole. It does not matter as they lend the same taste and flavor. However, do remember to remove the leaves after you have finished cooking. You will find the strong lemony essence imparted by the leaves to be extremely refreshing.

If you want to buy the Kaffir lime leaves in fresh or dried form, you will have to look for them on the shelves of Asian or Thai marts. Spotting a bag of dried Kaffir leaves is not that difficult. You can just pick it up or if you are finding it difficult to spot one just order it over the internet. A bag of leaves can be stored sealed in an air tight container for a couple of years without any problem. Just make sure that you never put wet hands inside the container and the leaves will be fine. If you want to store fresh leaves, then put them in a zip lock bag and freeze them. They can stay up to nine months without rotting.
