Ways To Cook Eggplant


Eggplant is a versatile vegetable that lends itself to a variety of cooking methods. One can fry, grill, roast, or bake it. To bake it, first prepare the eggplant. Cut off the stem and remove the skin. Slice the eggplant vertically and salt the slices generously. The vertical slices will ensure that your eggplant absorbs less oil.

Allow them to sit for an hour and then squeeze the eggplants dry. This will remove the excess moisture from the eggplant as well as any bitterness that it has. Wash well under running water to remove excess salt. This step too is very important, unless you like an excess of salt and sodium in your food.

Next, fry each slice until it is brown on both sides. Use any oil that heats well and does not smoke easily. Eggplants need to be fried at a high temperature. There is no need to use olive oil. In fact, olive oil smokes far too easily for this purpose. Drain the fried pieces on paper towels and layer them in a casserole dish. Over each layer add some tomato sauce and shredded mozzarella cheese. Now bake the entire dish at 350 degrees Fahrenheit for around 20 minutes or until the cheese starts bubbling. This tastes better than a pizza and is certainly much healthier.

You can also grill eggplant and or roast it over coals and mash it up for a tasty dish. There are many ways in which eggplant can be cooked to add variety to your menu.
