How To Make Cucumber Relish ?

Here is a simple recipe that will show you how to make cucumber relish, which you can enjoy with any meal.
Chop cucumbers to make 8 cups. Now chop onions until you have one cup. Mix two cups of chopped red peppers and two cups of chopped green peppers. Mix all the ingredients together and add one tablespoon of turmeric powder and mix well.
In another bowl, take around 8 cups of water and add half a cup of salt. Pour this mixture over the mixed vegetables and set it aside for around 3 to 4 hours. After that, drain the water from the vegetables. Pour some cool water over the vegetables and set it aside for another hour. Then drain the vegetables again.
In a separate bowl, mix 2.5 cups of sugar along with 2 cups of vinegar. Add celery and mustard seed to this mixture. Boil the mixture until the sugar dissolves completely. Then add the mixed vegetables and allow the mixture to simmer for around 10 minutes. Remove the mixture from the heat and then pack it into sterilized jars. Make sure that you seal the jars properly so that no air gets in.
If you do not have the patience to chop the vegetables, you can coarsely blend the vegetables in a blender. If you want to make the relish hot, you can add jalapenos to the vegetables depending on how hot you want it.
You can also make cucumber relish using cucumber, onions, carrots and green pepper.
