Some say their favorite way is to break up the whole cauliflower along with the tender green leaves, boil in slightly salted water, and then mash it up with butter and pepper. The people who have eaten this dish of cauliflower head and its leaves profess that it is nearly as good as mashed potatoes.
Cauliflower Leaf Stalk Pulao is one of the dishes that is made of its leaves. Basically, there is not much information about people using cauliflower leaves widely in dishes. Though one could get very little information on cauliflower leaf dishes, there is an opinion that eating cauliflower leaves is actually very nutritious.
