The carrot is a versatile vegetable that can be eaten either raw or cooked. It is healthy in both forms, though it is healthier in the cooked form. This is because cooking destroys the cellulose and makes it more easily digestible. Carrots contain carotene, which the body converts into vitamin A. Vitamin A is good for the eyes. It also has sufficient quantities of vitamins B and C. Besides, it contains calcium pectate that lowers blood cholesterol.

A meal containing carrots should include some fat to help the body absorb the carotene. Carrot greens are rich in Vitamin K. Carrot is good for eyesight, skin, growth and it boosts the body’s immunity. Carrots are available throughout the year, and even diabetics can have up to one carrot a day without any adverse side effects. Carrots are also full of biotin, potassium, calcium, magnesium, phosphorous, organic sodium, besides containing trace amounts of other minerals. Carrots contain phytonutrients such as lutein, lycopene, zeazanthin, and xanthophyll. All of them help heal a variety of diseases.

This tasty vegetable is very beneficial to health. It can be cooked in a variety of ways or eaten raw in salads with a dash of lemon juice. Try to include some carrots in your meal each day to benefit from its marvelous health properties. Carrots help fight astigmatism, macular degeneration, and cataracts. It also helps reduce arthritis, gout, and other inflammations. Carrot juice is a diuretic, and helps prevent water retention. With all these health benefits carrots are a must for everyone.
