To prevent the juice of the beet from staining your hands and clothes, remember to wear kitchen gloves and an apron while handling and peeling the beets. The first thing you need to do is to gently scrub and wash beets to remove any accumulated dirt on the surface. If your beets are whole, cut away half an inch just above the bulb of the beet, and leave one-fourth inch on the root to retain the maroon-red color.
To peel away the skin of beets without a fuss, first soak them in a saucepan covered with water, place on stove and bring to a boil. Once the water reaches boiling point, put on the lid of the saucepan and simmer for about 10 to 12 minutes. If you are using smaller sized beets, then 8 to 10 minutes of simmering should be perfectly alright. The idea behind boiling the beet is to loosen the outer skin and not to cook the beet. By using a spoon or ladle remove each beet and place in cold water. Discard the water used for boiling. When the beets are at a temperature you can handle, use a paring knife to cut the beet skin from the top to the bottom gently. Keep repeating this process until all the skin comes clean, and your beet is now ready for you to use in your salads or your cooking.
