Needless to say that asparagus is an excellent source of a number of essential nutrients and that’s the reason people prefer to eat them regularly. Not only it contains variety of vitamins and minerals it also has high dietary fiber and it is quite popular for its anti-oxidant nature and anti-carcinogenic qualities.

Asparagus contains vitamins A and C. It is rich in Vitamin B and folate. It is said that if you serve six cooked fresh asparagus, it is equivalent to approximately one gram of dietary fiber, 490 IU of Vitamin A, 10 mg of Vitamin C and 131 mg of folate. It is also very good for those who prefer low cholesterol food. The fat content is extremely low and it has minimal amount of sodium. Therefore, we can say that it is excellent for your heart and keeps all kinds of cardiovascular diseases at bay.

The best way to serve asparagus is by serving them fresh, or boiled and drained. You may not get asparagus throughout the year as it is more often seen in the stores during March and August. In such cases people prefer to have canned asparagus. However, these canned asparagus do contain all the nutrients, as the nutritional value gets reduced to almost half. Hence, it is always better to have the fresh ones.

When you are buying them in a store, you would usually find them in primarily three colors, green, white and purple. Always look for bright green stalks. Avoid the ones that have wilted stalks, and those where the buds are opened.
