Scientifically known as Cynara cardunculus, artichoke plants are one of the largest herbs that originated from Ethiopia, and presently these are being cultivated in many other continents. Artichokes were brought to the U.S in the seventeenth century by the European discoverers.

Artichoke has found its importance in many American families ever since it has been brought here. The reasons for so much importance given to artichokes are because of its high nutrient values with no fat at all. An approximately 100 gm of artichoke contains about 53 kcal. Which is an amalgamation of 12g of carbohydrate, 8.8g of sugar, 3g of protein, 2.4g of dietary fiber, 1g of niacin, 300mg of potassium, 60mg of sodium, 42mg of magnesium, and also some other essential elements and nutrients that include zinc, iron, chromium, calcium, copper, riboflavin, thiamine, Vitamin C, Vitamin B, cynaropicrin, lutelin, folate, and dicaffeoylquinic acids.

Artichokes are rich in dietary fiber and can be very easily digested. Artichokes are an excellent nutrient for those who have type 2 diabetes. Artichokes are beneficial for those who suffer from cardio vascular diseases. They are also very good sources of potassium and sodium salts. An active element in artichoke known as caffeoylquinic acid helps in treating different problems related to liver and kidney. Extracts of artichokes are quite useful in lowering the blood cholesterol and enhancing the digestion. In relation to digestion problems, such as irritable bowel syndrome, dyspepsia and few others, artichokes are quite useful.
